Translation
There’s a kind of magic about truffles, which are called rabasses in Provençal. They live in the ground (but not just any ground), and on the roots of trees (but only certain kinds of trees). Until 1810, when the link between truffles and trees was discovered in the Vaucluse, no one knew how to make truffles grow; they could only look for them and hope. Truffle cultivation experienced a "golden age" that lasted about 30 years at the end of the 19th century, during which production in France sometimes reached 2,000 metric tons [about 2,200 tons] per year. During the 20th century, many factors contributed to the dramatic decrease of this bounty, notably the loss of life and rural exodus due to World War I and the effects of modern agriculture. This crisis continued until the 60s, when truffle-producing regions got together to revive truffle cultivation. Nevertheless, today France produces only 15 to 20 metric tons per year, and the disparity between supply and demand guarantees incredibly high prices and the poaching of truffle plantations. "The truffle is an underground mushroom whose presence is dependent on the soil as well as the climate throughout the year. It lives in symbiosis with certain trees, such as oak trees. Production begins 7 years after planting and after 10 years reaches an average production of 5 to 30 kilograms [about 11 to 66 pounds] per year for at least 25 years. For optimal production and to protect the young plants from dryness, truffle oaks are irrigated.
